Easy Scallop Recipe,Citrus, Mustard Dressing
Recipe: Scallops with citrus, mustard dressing

- 12 large scallops (if possible, with their coral)
- 1 red onion
- 3 c. olive oil

Peel
the onion and chop very finely. Wash the arugula and curly then drain
them. Cut curly leaves into small pieces and peel off the rocket.
Peel the grapefruit raw and detail the supreme quartered.
For the dressing, pour into a bowl vinegar, oil, mustard, salt and
pepper, then beat vigorously until all the sauce thickens slightly. Dip
the salad leaves in the dressing before placing them on plates.
Sprinkle with the chopped onion and draw over the supreme grapefruit.
Drizzle lemon juice scallops and sprinkle with salt and pepper.
In a non-stick pan, heat the butter and fry the scallops on each side
for about 3 minutes. Deglaze with vermouth and prepare the scallops on
the salad before serving.
